Mandarin Marmalade

MANDARIN MARMALADE WITH PECTIN

 

6 mandarin oranges

1 ½ cups water

½ bottle liquid pectin

2 lemons

5 cups sugar

 

Remove mandarin and lemon peels, lay peel flat, cut off as much of the white part of the peel as possible.  Discard white.  Slice the peel into very thin slices.  Cover with 1 ½ cups water, bring to a boil and simmer for twenty minutes...  Chop the fruit pulp and discard any seeds and membrane.  Add pulp to the peel and simmer for 10 minutes.  Measure 3 cups of fruit into a kettle and mix in sugar.  Follow the procedure on the pectin container for the rest of the processing.  Skim foam off top and ladle into hot, sterilized glasses, seal.  Makes seven 8 oz. glasses.

 

(Using a zester, or potatoes peeler seems like an easier way to get the required peel)
