Chicken A L'Mandarin

INGREDIENTS

  • 3 lb frying chicken, cut into serving pieces.

  • 1 tablespoon margarine

  • 1 tablespoon honey

  • 1 teaspoon soy sauce

  • ½ teaspoon salt

  • 1 cup mandarin juice

  • 1 tablespoon grated mandarin peel

  • 1 tablespoon white wine

  • 1 tablespoon ground ginger

  • Fresh ground pepper

DIRECTIONS

​

Combine all ingredients except chicken and mandarin juice. Coat chicken pieces with marinade and refrigerate 30 minutes or overnight. Remove chicken from marinade and place in baking dish. Bake for 20 minutes at 400 degrees. Reduce heat to 300 degrees and continue baking, turning chicken and basting with marinade until chicken is done, about 20 minutes.
