Mandarin Orange Zucchini Bread

Recipe developed by Ann's Orchard


  • 1 cup light brown sugar, lightly packed

  • 1 ½ cups all-purpose flour

  • ½ teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1 cup raw zucchini, coarsely grated

  • 1 medium raw carrot, coarsely grated

  • ½ cup nuts, chopped

  • ½ cup raisins (optional)

  • 2 large eggs

  • Zest from3 mandarin oranges

  • ½ cup fresh squeezed mandarin juice

  • ¼ cup vegetable oil



Preheat oven to 350 degrees F. Lightly grease 9 x 5 inch loaf pan. In large bowl, stir together sugar, flour, salt, baking soda and cinnamon. Stir in zucchini, carrot, nuts, eggs orange juice, oil, and zest.

Bake approximately 1 hour, or until a fork inserted in the center comes out clean. Remove from pan, and cool on a wire rack.


Freezes well.
